• Story #060 - Aran Goldstein

    Chef Aran Goldstein is both a teacher and an entrepreneur who is dedicated towards building skills and intuition around food and cooking for his students and clients so they can live the life they want.

    Aran graduated from Northeastern University in Boston and received his degree and training in culinary arts from the New England Culinary Institute. His work experiences are many, from brigade work in boutique hotels, stints in Michelin star properties in Italy, to opening a restaurant in China. 

    As an educator, Chef Goldstein has taught hundreds of culinary and baking lessons, from an organic farm cooking school to current medical students learning about food as medicine. He recently launched a new project called Cook and Live, which supports individuals and families through their journeys in food, cooking, and thriving as humans.

  • Story #059 - Dennis Littley

    Chef Dennis Littley started cooking at a very early age and drew his early inspiration from Graham Kerr, the Galloping Gourmet. After completing his training as a chef’s apprentice, he went on to work at white tablecloth restaurants, in corporate executive dining, and finally at an all-girls Catholic high school. After 3 years at the school, he created a Culinary Training Program that brought acclaim to the school and was used as a model for other schools around the country via the foodservice company he worked for.

    After retiring from professional cooking, Dennis became a food blogger, where he would become known as Chef Dennis by his fans and readers worldwide. He has expanded that content creator role into a food & travel blogger, a chef speaker, a brand ambassador, and a digital strategist. This past year his blog had over 8.5 million page views with over one million followers on social media.

    A native Texan who lived most of his life in the Philadelphia area, Chef Dennis now resides in Kissimmee, Florida with his wife Lisa. He credits an old family friend Mama Jeanette with teaching him his core values and how to listen to food. His goal is to share his recipes and the best cooking tips to make his listeners feel more comfortable in their own kitchens and to help them find the joy of cooking!

  • Story #058 - Jennifer Lee

    Chef Jennifer Lee grew up in Mystic, Connecticut where she has had a love and passion for baking and cooking since a very young age. While other kids her age were watching cartoons, she was watching the Food Network. As a young teenager in high school Jennifer started working at her relative’s Chinese dim sum restaurant, beginning as a hostess and busser, and eventually working into more advanced positions in both the front and back of the house.

    During her later years in high school, Jennifer accepted a position at a bake shop in Mystic Connecticut, where she worked in the front of the house taking orders and assisting customers, eventually becoming a barista, and helping in the kitchen with the baking.

    After graduating from high school, Jennifer enrolled at the Culinary Institute of America in Hyde Park, New York where she graduated with an associate degree in baking and pastry arts. During her time at the Culinary Institute of America, she opened her at home bakery called J Lee Bakery, which specialized in cakes, cupcakes, and French macaroons.

    Besides baking, Jenn has always had a love for photography and videography. In the past couple of years, she has started her own YouTube channel which focused on her time at the Culinary Institute of America to share her experience with her viewers who may be interested in attending the college one day. Her videos have become very popular which has allowed her to become a legitimate content creator with multiple brand deals. In the future, she plans to continue her YouTube channel while pursuing a pastry chef’s position in Boston or New York.

  • Story #057 - Rudy Kloeble

    Raised in a family of restaurateurs, Chef Rudy Kloeble grew up assisting in the kitchen and bakery that his dad owned in Idyllwild, CA. He did this from a very young age, starting out doing odd chores such as stuffing donuts and peeling potatoes, and continued working in the family businesses thru high school and into his first semester of community college.

    Rudy was then nudged by his dad and uncle to go to visit his other uncle in Germany and attend a Hotel School, which he did. He then went on to get his culinary apprenticeship in Munich. After he completed his apprenticeship, Rudy stayed on in Germany working for a Swiss company for 2 years, where he worked many events such as Oktoberfest and cooking for royalty and celebrities such as the King of Spain.

    He eventually returned home to the United States to help his uncle with his ranch where he was a self-made farmer for five years growing a variety of crops and raising chickens, pheasants, turkeys, goats, and cattle. He eventually left the ranch and opened and operated a Cafe in San Diego for 3 ½ years before selling it and going into teaching. He started teaching classes at a local wellness center before joining the faculty at the Art Institute San Diego where he was employed for 11 years. Today Chef Kloeble is a lecturing instructor at the Culinary Institute of America in Napa.

  • Story #056 - Mario Limaduran

    Chef Mario Limaduran is a native of Bolivia and immigrated to California when he was 14 years old. Raised in a hospitality-driven family, Mario’s love of food first began when his grandmother helped him make pizza for his classmates as a young boy. From that moment, combined with an infatuation with the movie Ratatouille, Mario fell in love with the feeling of making people happy through culinary arts.

    Chef Mario attended both the North Miami and Denver campuses of Johnson and Wales University, receiving an associate's degree in culinary arts and a bachelor’s degree in culinary nutrition. The culinary nutrition program at JWU empowered Mario with the knowledge to succeed within the sports performance world and develop a world-class program for the UFC and the Sacramento Kings, as well as the necessary knowledge to do food product research and development. 

    Chef Mario's culinary nutrition career continues today at Trifecta, where he recently developed a training program to empower culinary teams around the world who work within the sports performance field to educate and implement the unique method to personalize every meal to an athlete’s personal needs. As their executive chef, he leads Trifecta’s Research and Development Department and has helped grow the company into becoming the largest organic meal delivery service in the United States. His vision today is rooted in the desire to disrupt the world as it’s known and leave a long-lasting legacy in the food, health, and sports world.

  • Story #055 - LaToya Larkin

    Chef LaToya Larkin, MBA, CCE, has over 20 plus years of expansive knowledge and culinary passion which has led to a lifetime of achievement opportunities. Chef Larkin recently retired from her 8-year position as the Culinary Arts Program Coordinator at Spring High School in Spring, TX, where she was the first African American female chef in the district.

    Chef Larkin now operates her numerous businesses full time which reflect her passions in life. Her businesses include:

    • “Black Girl Tamales” - a signature line of Soul Food fusion tamales such as Collard Green w/Smoked Turkey, Oxtail, Smothered Chicken, and Smothered Pork Chop.
    • “Not Enough Thyme Personal Chef Services” - a personal chef/catering business that provides in-home meal service, meal preps, and catered events. 
    • “Divah Chef Apparel” – a culinary clothing line of shirts & aprons.
    •  “Thyme 4 a Change” – a non-profit organization that caters to at-risk youth by mentoring and guiding them while planting the positive seed to exemplify the vast opportunities of culinary. 

    Chef Larkin received her Master of Business Administration (MBA) degree in Nonprofit Management from Springfield College.   • Story #054 - Judy Doherty

    Chef Judy Doherty’s passion for cooking began with helping her grandmother make raisin oatmeal for breakfast. From there she held her first food service job at 15 and was then accepted into the Culinary Institute of America at age 18 for their AOS degree where she graduated second in her class. From there, Judy went on to the Fachschule Richemont in Switzerland where she focused on pastry arts and baking.

    Being a lifelong learner, Chef Doherty worked as an executive pastry chef for Hyatt Resorts for over 8 years before returning to school where she received a Bachelor of Science degree from Johnson & Wales University, graduating with Summa Cum Laude distinction. Judy’s most recent degree was a Master of Professional Services for Business from the Culinary Institute of America in Hyde Park, NY.

    In addition, Chef Doherty holds 2 visual art and professional graphic design certificates from the University of California’s Berkeley Extension. She currently runs multiple companies in the publishing and imaging industry and lives happily in the San Francisco with her 2 dogs.

  • Story #053 - John-Michael Collins

    Chef John-Michael Collins was born in San Diego, CA and from his earliest memories growing up he can remember a life full of abuse, including physical, mental, and sexual. John-Michael tried to end his life at the age of 10 though thankfully his grandparents stepped in to rescue him from the foster system. Due to this traumatic upbringing, he never believed in himself, nor though he deserved anything good, which he believes is what set him up to make a lot of bad choices throughout the early parts of his life.

    These bad choices are what eventually caused him to end up in Federal Lockup for several years. While incarcerated, John-Michael ended up in the kitchen, starting in the dish room. However, he was a fast learner and quickly moved up the ranks to become the number two cook and the person who prepared the food for the officer’s mess dining room.

    Once released, he found himself at a halfway house in Washington, DC with suggestions to seek out and apply for formal culinary training at the DC Central Kitchen (DCCK). He eventually applied, was accepted, and ended up graduating. After completing his training, he accepted a multi-week internship at The Ritz-Carlton, Pentagon City, which eventually turned into full-time employment.

    Chef Collins still currently works for the Ritz Carlton as a cook one but is looking forward to the next step in his culinary journey as he applies for various sous chef positions within the Marriott Company. However, an even more important goal for John-Michael is to become a beacon of hope for those coming behind him, and to continue to give back to his community by bringing people together through the avenue of food.

  • Story #052 - Tadgh Byrne

    Chef Tadgh Byrne grew up in Portugal before moving to Ireland at the age of 9. After high school, he went on to study culinary arts at the Technological University in Dublin. After honing his skills in restaurants and hotels around Ireland and Australia, as well as teaching culinary arts at Ballyknocken Cookery School, Tadgh went on to study Gastronomy and Food Studies in the master’s program at the Dublin Institute of Technology.

    A trained chef, he also opened his own catering company called “Fed Up Catering” and founded and writes for a blog about food and culture in Dublin called “The Feed”. His research focuses on government policy and food supplies during World War II and is a current member of the Wicklow Naturally network.

  • Story #051 - Jorge de la Torre

    Chef Jorge de la Torre is the Director of Culinary Arts for Kitchen Network-Park Hill, a non-profit incubator/accelerator/commissary for minority owned businesses and a workforce development learning center in Denver, Colorado.

    Chef de la Torre graduated from the University of New Mexico with a bachelor’s degree in business before going to the California Culinary Academy in San Francisco. After graduation from culinary school, Jorge worked at various restaurants in San Francisco and Hawaii. He then moved to Vail, Colorado, and worked for Vail Associates and was a chef/owner of a restaurant. He also worked for Whole Foods in Denver, many catering companies, and a steakhouse in NYC before finding his true culinary passion to teach.

    In 2001, Chef de la Torre began his career as a culinary educator, starting as a chef instructor for The Restaurant School at Walnut Hill College in Philadelphia, PA. He joined Johnson & Wales University at their Denver campus in 2002 as the director of culinary operations. He received his master’s degree in Adult Education from Colorado State University in 2005 and was promoted to the position of dean of culinary education, a position he held until 2021 when the campus closed.

    Jorge is on the board for We Don’t Waste, a nonprofit that picks up food from restaurants, stadiums, and caterers to distribute for free to those in need. Chef de la Torre is also a council member for CHOW (Culinary Hospitality Outreach and Wellness), which deals with the mental issues found in the culinary world.

  • Story #050 - Will Glass

    Chef Will Glass, co-owner and co-founder of HotSugarPop LLC, was born and raised in Pittsburgh, PA. Will developed a passion for Culinary Arts in high school and attended Johnson & Wales University in North Miami, earning a bachelor’s degree in Culinary Arts.

    While at Johnson & Wales, Will immersed himself in school activities, becoming a member of the Leadership Team, Special Functions Team, and Collegiate Ambassador Team. After graduation, Will enlisted in the United States Army Reserve as a Food Service Specialist and later commissioned as a Food Service Warrant Officer. Will has multiple overseas and stateside deployments and currently serves as the Food Advisor for the 518 Sustainment Brigade in Knightdale, NC. Will has also worked in several hotels, restaurant, and hospitals on the East Coast.

    Will is married to the former Tiffany Templeton and they have three children. Their oldest son Tye has several food allergies and they struggled to find foods for him to eat. However, one of the foods Tye can eat is popcorn. Will and Tiffany popped popcorn for Tye as a snack for his lunch daily and soon began to experiment. Together they developed a recipe for kettle corn, and began sharing it with their friends, family and coworkers. In 2016, Will and Tiffany brought their snack to Fayetteville and in 2018 launched HotSugarPop.

    Today HotSugarPop can be found in several stores throughout Fayetteville, online, and the the HotSugarPop's main location and manufacturing facility at the Cross Creek Mall.

  • Story #049 - Joe Peroney

    GUEST’S NAME: Joe Peroney

    CULINARY SCHOOL AFFILIATION: Westmoreland County Community College, Youngwood, PA

    BIO: Joe Peroney’s culinary career began in 2007 after his division with SONY Electronics outsourced all production overseas. Given the chance to pick a new career path, Joe enrolled in the culinary arts program at Westmoreland County Community College in Youngwood, PA. During his time at Westmoreland, Joe would serve as team captain for their ACF culinary knowledge bowl team and lead them to second place victory at the ACF nation convention in 2011. Joe would earn his degree in culinary arts, as well as a degree in dietetic technology, graduating in the spring of 2011.

    Upon graduation, he accepted a position at The Greenbrier Resort under Rich Rosendale CMC where he would spend the next six years. He would spend three of those years training under the culinary apprenticeship program, where he graduated at the top of his class, and was quickly promoted to sous chef and later chef de cuisine. While training at The Greenbrier, Joe also competed in 9 ACF sanctioned competitions, including ice carvings, buffet platters, five course, hors d’oeuvres and hot food competitions.

    Joe then moved to metro DC to open Roots 657 and the RC Culinary Lab with Rich Rosendale CMC. He would become the research and development chef for both properties and join Chef Rosendale hosting a variety of cooking classes such as modern equipment, sous vide, BBQ and CMC training.

    In February of 2020, Joe traveled to Stuttgart, Germany to represent the United States as a member of the ACF Culinary Team USA Regional team in the 25th annual IKA Culinary Olympics. The regional team earned a gold medal and was ranked third in the world for culinary artistry. Joe also competed as an individual at the IKA Culinary Olympics and was rewarded with a bronze medal for his work. Joe recently accepted the Chef de Cuisine position with The Rolling Rock Club.

    GUEST’S NAME: Shane Schaibly

    CULINARY SCHOOL AFFILIATION: Johnson & Wales University, North Miami, FL

    BIO: Born and raised in a small town just outside of Tampa, FL, Chef Shane Schaibly has been in the industry since the young age of 14. He has worked in all facets of the industry from small, locally owned casual dining spots to high end hotels and everything in between. 

    After graduating from Johnson & Wales University’s North Miami campus with a degree in culinary arts, Chef Schaibly went on to work at The Ritz-Carlton, South Beach before returning home to the Tampa area to work as Pastry Chef, Catering Chef and eventually Sous Chef of Café Ponte in Clearwater. From there, Shane made the jump to the corporate world and accepted the position as the Corporate Chef for Front Burner Brands overseeing their various concepts including The Melting Pot, Burger 21 and GrillSmith. In this role Chef Schaibly helped develop menu items and the opening of new restaurants around the world, including in Canada, Mexico, Riyadh, KSA, Dubai, UAE, and Jakarta, Indonesia. 

    In 2014, Shane moved on to First Watch Restaurants, Inc. as their VP of Culinary Strategy / Corporate Chef, working on revamping the existing regular menu and Seasonal Feature menu offerings along with fine tuning some the already fantastic fresh and healthy menu items. First Watch is known for its out-of-the-box approach to Breakfast, Brunch and Lunch, while still maintaining a health halo around many of its menu items.

    Shane has found a great home in the First Watch family and thoroughly enjoys being able to create menu items that push the envelope while still balancing healthy with great tasting food. He lives in Bradenton, Florida with his wife Lisa and their two children, Jackson and Olive. He enjoys spending time on the Gulf of Mexico, collecting tattoos and cooking at home for his family while continuing his exploration of other cultures and food around the world.

    BIO: Chef Emilia Tomaszycki is originally from Richmond, Michigan. Right after high school, her studies at the Culinary Institute of Michigan became the main focus for two years. Specializing in baking and pastry, she has worked at some of the top athletic and country clubs in the nation.

    Onward she marched to the hotel industry, working at the Ritz Carlton Dallas, Naples, and Bachelor Gulch. Now she is the Executive Pastry Chef at Bonita Bay Club. Her favorite pastry to make is an entremet or freshly spun ice cream! In her free time, she loves to check out new restaurants, make craft cocktails, and go sky diving!

  • Story #046 - Jesse MacDonald

    GUEST’S NAME: Jesse MacDonald

    CULINARY SCHOOL AFFILIATION: Culinary Institute of Canada, Charlottetown, Prince Edward Island

    BIO: Chef Jesse MacDonald had no aspirations of becoming a chef when he was growing up in Launching, Prince Edward Island. His childhood home was located on the corner of his grandfather’s large family farm, so he was able to spend ample time as a youngster gaining an appreciation for all things local.

    In middle school he quite innocently got a summer job washing dishes at Rodd Brudenell River even though he was born into a fourth-generation lobster fishing family. By the time Jesse graduated high school he was one of the lead cooks in the resort’s main dining room. It was then that he decided to pursue cooking as a career and ended up enrolling that fall at the Culinary Institute of Canada, where he graduated from in 2010.

    Chef MacDonald spent time during and after culinary school apprenticing under Chef Warren Barr, formerly of The Inn at Bay Fortune, as well as Chef Dave Mottershall, formerly of Terre Rouge and Red Shores Racetrack & Casino, before accepting his first Sous Chef position at an Italian restaurant in Guelph, Ontario. After spending some time exploring the vast dining scene of Ontario, he took an extended trip to Europe where he was able to secure stages in hotels and restaurants in France & Italy. Although he considered staying longer term, he ultimately decided to head home to Prince Edward Island.

    Chef MacDonald then accepted a position with Rodd Hotels & Resorts as Sous Chef at Rodd Brudenell and after three seasons, he was offered the position of Executive Chef at Rodd Miramichi River Hotel in Miramichi, NB. After 4.5 years there, Chef MacDonald was given the opportunity to become Executive Chef of Rodd Crowbush Golf & Beach Resort, as well as Corporate Culinary Ambassador of Rodd Hotels & Resorts.

    GUEST’S NAME: Rando Kauge

    CULINARY SCHOOL AFFILIATION: Cesar Ritz, Culinary Arts Academy, Switzerland

    BIO: Chef Rando Kauge grew up in Estonia, which is where his love of food began. In addition to food, he also loved football (soccer) and played professional in his younger years. He eventually gravitated to the hotel and restaurant industry and after working in numerous areas of the industry, established his own catering company in 2012. His catering service provided high-end delivery to demanding international and local customers like NATO, Estonian Government members and UEFA.

    After many years running his catering company, he decided to pursue formal culinary training and enrolled in the Cesar Ritz Culinary Arts Academy in Switzerland. After graduation, Chef Kauge went on to work in high-level, 1 star Michelin restaurants within Switzerland, taking positions as saucier and chef de production.

    Today Chef Kauge has come full circle and has returned to Cesar Ritz Culinary Arts Academy in Switzerland as a full-time chef instructor where he teaches culinary skills-based classes in Banquet and Buffet Preparation. He is also very passionate about sustainable living and vegetarian cuisine and teaches the vegetarian gourmet course.

    GUEST’S NAME: Danielle Benson

    CULINARY SCHOOL AFFILIATION: Georgian College, Ontario, Canada

    BIO: Chef Danielle Benson is from Ontario, Canada and first got started in the culinary industry in 2015. She had been looking to find a better relationship with food and control over food after struggling with mental health and an eating disorder. Chef Benson wanted to take her love of food and cooking to the next level, so she enrolled in culinary school at the Owen Sound campus of Georgian College where she learned a lot about culinary techniques. While only there for one year, she feels she learned the basics, however she was left wanting to learn more!

    Chef Benson’s philosophy is that food is not only what fuels our bodies, but is also a creative outlet, and therefore knowing how to prepare it should be general knowledge. As a result, she created and hosts the Kitchen Survival Guide podcast. The first series of the show’s episodes focuses on food culture and history to help the listeners understand where their food comes from and how it has affected humanity throughout the years.     GUEST’S NAME: Carroll Webb

    CULINARY SCHOOL AFFILIATION: Johnson & Wales University, Providence, RI

    BIO: Originally from Washington DC., Chef Carroll Webb started his culinary career in Baltimore Maryland. It was there that he met Pamela Rouch, a recruiter from Johnson and Wales University, while attending a hotel / restaurant convention in the city. She encouraged him to apply to JWU’s College of Culinary Arts, which he did. His application was accepted, and Chef Webb packed up and relocated to Providence, RI in 1996. Overall, he spent six years at Johnson & Wales University where he obtained an Associate’s degree in Culinary Arts, a Bachelor’s degree in Food Marketing, and Master’s degree in Education / Teaching. 

    During and after his education at Johnson & Wales University, Chef Webb gained practical industry experience in restaurants, corporate dining organizations and non-profits in numerous cities, including Baltimore, New York, Washington DC, and Providence RI. He has also been able to pass on his skills and knowledge of culinary arts to future generations of food and beverage employees through his teaching in both secondary and post-secondary education, as well as working for nonprofits and teaching ServSafe classes for the National Restaurant Association’s Educational Foundation.

  • Story #042 - Charles Redmon

    GUEST’S NAME: Charles Redmon

    CULINARY SCHOOL AFFILIATION: Ivy Tech Community College, Muncie, IN

    BIO: Chef Charles Redmon planned on making a career out of the military after he enlisted in the US Army in 1995. His plan however was cut short by an injury after just over 12 years of being an Infantryman / Combat Lifesaver. Now permanently out of the military, Chef Redmon needed to find a new career path. He was approved by the Veterans Administration to go back to school for training for vocational rehabilitation which is when culinary arts piqued his interest.

    Having had some previous food and beverage experience working in professional kitchens prior to enlisting, he believed getting a degree in culinary arts would be just what he needed to get his new career started. After enrolling at Ivy Tech Community College in Muncie, Indiana, Charles began his academic pursuit in their new culinary arts / hospitality management degree program.

    It was at Ivy Tech that Charles met his mentor Chef David Kain who was influential in motivating Charles to pursue his American Culinary Federation’s Certified Executive Chef (CEC). He also helped him get his culinary internship at Walt Disney World in Orlando, FL. After graduating, Chef Redmon has had several executive chef’s positions in the health care side of the industry, including his current position. He also continues to operate his catering company, “Veteran’s Catering”, part time.

    BIO: Chef Utpal Dighe’s journey to the kitchen came after a long career as a courtroom trial attorney. For many years, while working in South Florida as an attorney, his passion for cooking grew until he finally made the decision to change professions.

    After closing his law practice, he enrolled at Johnson & Wales University where he earned his associates degree in Culinary Arts and a bachelor degree in Food Service Management. After working and gaining experience in both front of the house and back of the house positions in restaurants, hotels and catering companies, Chef Dighe decided to open up his own businesses. He currently is the owner / chef operator of Saborwala, an Indian-Latin fusion food virtual kitchen, and Samsara Creations, a private event and catering company.
